
Peanut Butter Honey Cookies (with Freshly Milled Flour)

These peanut butter cookies can be made using freshly milled flour, store-bought whole wheat pastry flour or store-bought all-purpose flour. They have a delicious honey flavor that brings out the peanut butter and goes so well with the flavor from the whole wheat flour as well! - 1 cup natural, creamy peanut butter (no added oils or sugar)
- 1/2 cup butter, softened
- 1/2 cup honey
- 1/2 cup brown sugar (learn how to easily make your own!)
- 1 tsp vanilla extract (learn how to easily make your own for a fraction of the cost of store bought)
- 1 egg
- 1.5 cups whole wheat flour (soft white wheat)
- 1 tsp baking powder (learn how to make your own!)
- 1/4 tsp salt
Instructions
- Preheat the oven to 350° F.
- In a mixing bowl, mix together the peanut butter, butter, honey, brown sugar, vanilla, and egg until smooth and well combined.
- In a separate bowl, combine the whole wheat flour, baking powder, and salt.
- Stir into the wet batter until well blended.
- Refrigerate dough for several hours until firm enough to roll into balls.
- Roll cookie dough into walnut sized balls and place on a cookie sheet covered with parchment paper. Use a fork to flatten slightly.
- Bake for 13-15 minutes until cookies are slightly browned on the edges.
